The main distinguishing feature of Señorío de Montanera is its control over the entire production chain, from the breeding of the raw material—pure acorn-fed Iberian pigs—to the production of the final product: hams, shoulders, sausages, and meats.
Certified quality assurance
In our quest to achieve excellence in all our products and processes, we have implemented a traceability system that allows us to control the origin of each and every one of our parts and the various production processes we carry out on them.
In this way, we can guarantee the highest quality of acorn-fed Iberian products.
Señorío de Montanera is perhaps one of the few companies in the Iberian sector that carries out individual inspections of all Iberian pigs before entering the montanera, exhaustive audits during the process in the pasture, and an individual record of each piece at each stage of the production process.
Labeled with all the information
Some of the data that will provide us with the necessary information to control the stability and quality of our Iberian products are: farm of origin of the Iberian pig, acorn consumption during the montanera, replacement during montanera (weight acquired during this period), carcass weight, fatty acid profile, time spent in salting, cold post-salting, and conditions of the natural drying room and the cellar.
To ensure transparency in our product information, this data is also available to our consumers.
All our 100% Iberian acorn-fed hams and shoulders are identified with two seals: one corresponding to the black Iberian quality standard, which certifies that it is a purebred acorn-fed product, and a Señorío de Montanera seal, individually numbered (with a barcode), which contains the information referring to this traceability.
Any consumer can check the traceability of their Señorío de Montanera ham or shoulder by entering the numerical code on our brand's traceability seal on our website.
