Traditional recipe from southern Extremadura

The Solomillo Embuchado (Stuffed Pork Loin) is the result of Señorío de Montanera's research and development project to recover forgotten recipes from Extremadura and bring them to an industrial scale. This project has also produced the Lomo Doblado (Double Pork Loin) and Coppa Ibérico de Bellota (Acorn-Fed Iberian Pork).

Following the traditional recipe, it's seasoned with salt, light touches of garlic and pepper, without paprika so as not to mask the characteristic acorn flavor; and it's stuffed with two sausages joined lengthwise to give it more thickness and juiciness.

When cut, a thin white line formed by the fat covering the two pieces of sirloin can be seen, reminiscent of the appearance of folded loin.
