However, the novelty in its flavor, natural and pure acorn, does not leave
indifferent to whoever tries it; and as such deli has appeared in numerous media outlets: Out of Series, He
World, Expansion, Five Days, Kitchen Ten, Mia Magazine, Tapas Magazine, among many others.
Señorío de Montanera is a pioneer in presenting this exclusive piece to the market, which has become a must of the stores Gourmet. Due to its scarcity and exceptional quality, in recent times the Iberian sirloin It has been mainly consumed fresh, to be consumed grilled, roasted or in carpaccio, which has meant that its stuffing, very common in slaughter areas, has practically become extinct. retailThis product is the result of Señorío de Montanera's research and development project for the Recovery of forgotten recipes from Extremadura and its transfer to an industrial scale; from which the following have also been obtained: Folded Back and the Iberian acorn-fed pork.
Preparation of Señorío de Montanera Cured Sirloin
He Señorío de Montanera stuffed sirloin It is made with 100% Iberian acorn-fed pigs and follows the traditional formula; it is seasoned with salt, light touches of garlic and pepper, without using paprika so as not to mask the characteristic acorn-fed flavor of the raw material. After a day in marinade, before stuffing it, it is spread with a thin layer of white lard from pure acorn-fed Iberian pork, which gives it juiciness, prevents oxidation, and slows down its curing process. Due to its small size, it is double-stuffed, with two sausages joined lengthwise, to give it more caliber and thus the stuffed piece turns out to be very juicy. In fact, when cut, a thin white line formed by the lard that covers the two pieces of sirloin can be seen, and is reminiscent of the appearance of folded spine.
In short, it is a artisan product, traditional and very original, which is an important source of monounsaturated fats and basic fatty acids for our body (oleic acid, vitamin B1, phosphorus and iron, among other nutrients) and which is ideal to have as an aperitif at any time and in any place.
The cured sirloin is available for sale at gourmet stores and the Señorío de Montanera's online store.
