Since its inception, Señorío de Montanera has remained faithful to its traditional values, championing the artisanal production of 100% Iberian acorn-fed pork to obtain top-quality products. It has an R&D department that revives and improves traditional recipes, eliminating additives and allergens to achieve more natural and healthy products.

Their pioneering work revived the acorn-fed Iberian Lomo Doblado, which had been almost lost due to a lack of generational transmission. In 2006, with the support of the CDTI (Spanish Institute of Technology and Trade), they launched a project to revive traditional sausages and produce them on an industrial scale.

Since 2017, they have eliminated gluten, lactose, and milk protein from their entire catalog, creating more natural and healthier products.

Commitment to our environment

We demonstrate our respect, and that of our members, for nature and for the purest Iberian pig every day with the perseverance with which we have cared for the pastures for many generations, and by renewing the trees (holm oaks, cork oaks, and gall oaks) that make them up.

In this way, we contribute to the maintenance of our land's traditional ecosystem, the conservation of unique productions in the world, and also to the survival of the Iberian breed.

At Señorío de Montanera, we are proud of what we do and how we do it. That's why we advocate for transparency of information both internally and externally, through exhaustive traceability of all our products and strict compliance with Iberian quality regulations.

Responsible practices:

All our Iberian hams and shoulders have a double seal. On one side, the black seal required by Iberian quality regulations, which indicates that the product has been produced from a 100% Iberian acorn-fed pig, and on the other side, the Señorío de Montanera seal, which allows for traceability. This means that each piece is assigned a barcode that identifies the animal from which the product comes, the farm where it was raised, the amount of acorns it consumed, and the production date, among other information.

Commitment to society

Señorío de Montanera, with 25 years of tradition, has remained faithful to the spirit of its founders. Consuming natural, authentically prepared foods is one of the fundamental pillars of good health. Our 100% Iberian acorn-fed products have a high level of oleic acid, which is beneficial for health and reduces the risk of cardiovascular disease.

For this reason, we have established a collaboration agreement with the Menudos Corazones Foundation to provide our full support to families with children suffering from heart problems. Through various activities, we strive to contribute our part to the magnificent work of this Foundation, which strives every day to improve the quality of life of people with congenital heart disease and their families.

The Dehesa de Extremadura PDO, in collaboration with Señorío de Montanera, is donating 1,000 packets of 100% Iberian acorn-fed shoulder ham to hospital workers in Extremadura.
