It is made with meat from the head end of the back and the dewlap of the pure acorn fed Iberian pig, which are both finely chopped. They are marinated in salt, a mixture of paprika and cayenne, garlic and additives. Finally they are made into sausages using natural gut or synthetic gut of a large diameter, 85mm.

The drying room and maturing of more than 2 months makes it unique in the sector; the characteristics of aroma and flavour are refined, with no acidic aftertaste, which affect other products of this style, but made industrially. When the moment arrives they are cleaned, labeled, and vacuum packed. If made with synthetic gut, the weight is approximately 300-350gr in a silk screen printed cardboard container.
